Some days ago Yashendu and Ramona baked a really delicious pumpkin pie and since then I am asking Ramona daily to write down that recipe so that more people can enjoy this great dessert. Of course it is a recipe for cake without eggs. As always in baking, some ingredients were actually used a bit more and others a bit less but here are the approximate values and you can also add or reduce ingredients like sugar or raisins according to taste.

An easy way to make Ayurvedic Pumpkin Pie Recipe

 

 

Time you need for making Pumpkin Pie Recipe

Preparation time20 minutes 
Cooking time: 20 minutes 
Total Time: 50 minutes 

Ingredients

2 ½ kg Ripe Sweet Pumpkin
750 g Wheat flour
150 g Sugar powder
100 g Ghee or a little bit more butter
3 tsp Baking power
100 ml Water
50 g Raisins
2 tsp Cinnamon
½ tsp Mace
½ tsp. Nutmeg
0.5 g Saffron
10 Small Cardamom seeds powdered

How to prepare Ayurvedic Pumpkin Pie Recipe without Egg

Peel the pumpkin and cut it into pieces before you steam it in a sieve over boiling water until it is fully soft to easily mash it. And of course that is the next thing that you need to do: mash it until there are no pieces anymore.

Now mix the baking powder and the spices into the flour. The ghee or the butter have to be warmed until they are liquid. If you would like to intensify the taste of saffron in your cake you can already add the saffron into the ghee at this stage.

When the ghee is liquid and the saffron already left some colour into it, you can mix the sugar powder into the ghee. To this you add the water and stir it.

In the next step you add this mix to the flour. When this is nicely mixed you can also add the pumpkin mash and in the end mix the raisins into the dough.

We have filled the dough into many small greased bowls and put them into our gas oven for about half an hour. So just take a try with your oven and test it after some time with the tip of a knife whether it is done or not. And when it is done, enjoy it, if possible still while it is warm, then it is best!
